Gluten Free, Keto Friendly, 90 second bread cinnamon roll

                                                      

 

This 90 second bread stuff is very versatile as you can make many things with it just by adding in a few ingredients here and there. 

One afternoon I wondered if I could make a cinnamon roll for my daughter and myself for a nice little snack and it turned out ot be pretty good. It is not anywhere near the taste of a Cinnabon, but this will do good for the times that I crave a cinnamon roll and want to keep the carbs down. 

 

Ingredients:

Directions:

  1. Soften the butter and add all the ingredients into a lightly greased  bowl of the shape that you want the cinnamon roll to be in
  2. Place the bowl into the microwave and cook for 90 seconds
  3. Take the cinnamon roll out of the bowl and let cool
  4. If you want you can make some cream cheese frosting to go ont the top. 

Enjoy. 

 

 

 




Gluten Free, Keto Friendly, Low Carb, Ham and Havarti Sandwich

                                               

 

It's been a while since I have written up a post about food, things have been pretty busy for me lately so this is one of the things that I had to take a step away from for a bit. 

Alas, here is a new post for a sandwich that I really like. Back when I could eat gluten I use to make these out of sourdough bread and they were just great. Nice crispy toast and mmmm.. just glorious!

Now that I am gluten free for life and I like to live by the Keto / Low carb lifestyle (for health beneifts) this is a adapted version of the Ham and Havarti sandwich that I love so much. 

 

This sandwihch is super easy to make and it is super tasy as well!

Ingredients:

  • 90 second bread
  • 1 - 3 Tbsp Dijon mustard (how ever much you like)
  • a few rings of sliced red onions (you can omit if you want)
  • 1 - 3 slices of havarti cheese.
  • 1 - 4 slices of ham.
  • 1 or so slices of tomato (optional)
  • 1-2 Tbsp softened butter.

 

Directions: 

Make your 90 second bread and then cut in half.
Take the dijon mustard and spread some on each side of the 90 second bread.
Take 1 - 2 slices of havarti cheese and place on one slice of 90 second bread.
Take 2-3 slices of Ham and place it on top of the havarti cheese.
You can now add some red onions if you want.
You can now add the tomato if you want.
Now you can re-layer the havarti cheese and the ham one or more times if you want.
Take the other slice of 90 second bread and make the sandwich iwth the side with the mustard facing down.
Spread the butter on the top of the 90 second bread and then grill it on a skillet or a frying pan until golden brown.
Flip the sandwich and grill the other side of it. (should be a few minutes each side depending on how hot your skillet is)

You can cut in half and enjoy.

Gluten Free, Keto Friendly, Low Carb, Almond Flour Pizza Crust # 3

 

Making pizza crusts that are not only gluten free, but also keto friendly (low carb) can be tricky sometimes but once you find what works,you can tinker here and there to find different variations that definatly work. The almond flour crusts are no exception here as I have about 3 or 4 different variations of the almond flour crust and I have about 7 or 8 different pizza crusts that fit both diets. This latest one is one that the whole family for sure likes, and it like the rest will be one that is only requested once in a while once people get too much of it, but to have as many pizza crusts as I do for sure help. 

 

 

This one is different, yet good. The setup for this is quite easy and it bakes quite nice also. My wife likes this one probably the best next to the cream cheese pizza crust and my daughter seems to like it also. They both say that this one is not nearly as greasy as the other ones

 

This is one of the crusts that you will want to par bake first, and you will for sure want to bake it onto a sheet of parchment paper on your pizza pan to prevent it from sticking.

 

Ingredients:

Directions: 

  1. Preheat the oven to 350 to 375 degrees
  2. Melt the cheese in a bowl for about 60 - 90 seconds. 
  3. Add all the ingredients into a bowl.
  4. Using a handheld mixer mix up the ingredients until it starts to resemble dough. 
  5. Get out a 14 or 16 inch pizza pan and line it with parchment paper
  6. Place the dough on top of the parchment paper and then place some clear plastic wrap on top to prevent sticking
  7. Press out the dough using your hands with the clear plastic wrap on top of the dough still
  8. Once the dough is in the shape that you want it to be in, remove the clear plastic wrap and bake it in the oven for 15 to 20 minutes  or so. 
  9. Use your favorite pizza sauce and make your pizza. My favorite sauce is ranch dressing

 

 




Gluten Free, Keto Friendly, Low Carb, 90 Second Personal Cake

 

The image above does not do this justice, mainly because I am horrible at frosting things. The frosting department is usually done by my wife, as she will usually take over since I am so horrible at it. I just cannot seem to get this down no mater how hard I try to do at it. 

This is a very simple cake that uses the principles from the 90 second bread, and the 90 second strawberry short cake recipes to make a individual cake. This works in a pinch, just like the other ones do and this one can be made just for you if you go to a party that has cake at and you dont want to be left out. The super nice thing about this, is that you can make this at work!  All you need to do is bring some frosting with you, and the ingredients and you can actually bring this along and mae it in your break room at work!

In the video below I said that I used 1 tsp of baking powder, but that was wrong I used 3 teaspoons of baking powder

  2. Mix all the ingredients into a bowl
  3. Cook in your microwave for 90 seconds. 
  4. Let cool for a while
  5. After it has cooled, frost it with the frosting and enjoy.

Gluten Free, Keto Friendly, Low Carb, 90 second ice cream sandwich

 

One thing that I miss about doing gluten free, and low carb at the same time is Ice Cream Sandwiches. 

Here is a fairly good base for a ice cream sandwich that definatly works, especially if you make your own ice cream. If you need a recipe for a ice cream, I do have a recipe on how to make your own Keto Friendly, Low Carb, Gluten Free Ice Cream

If you have your own Ice Cream made up, or you bougt some, the sandwiches here only take 90 seconds as we are using the base for the 90 second bread, to which we modified to make the strawberry shortcakes. This recipe is fairly simple and the nice thing is that you can easily add more cooa powder, remove cooca powder if it is too much for you. You can also add more Erythritol if you want, or you can add more vanilla extract. You could even make the sandwiches and put low carb whipped cream in between and freeze that for a while. 

 

Here is how I made it.

  1. Grease a small pyrex bowl or a coffee mug
  2. Mix all the ingredients into a bowl
  3. Cook in your microwave for 90 seconds. 
  4. Let cool for a while
  5. Cut in half and add some Keto Friendly, Low Carb, Gluten Free Ice Cream to the middle. 
  6. If you want, you can put it in the freezer for a bit to harden up the sandwich.

One thing about doing a Low Carb or Keto diet especially when you need to be gluten free is that you do not get to enjoy things that you used to such as pies. 

To help combat that, here is a easy to make recipe that is Keto Friendly, Low Carb and it is also Gluten Free. Thisis an almond flour style pie crust and it almost resembles a graham cracker style pie crust in the way that it crumbles. 

 

Ingredients: 

 

Directions:

  1. Preheat the oven to 350 degrees
  2. Grease a pie plate
  3. add all the dry ingredients into a bowl
  4. Add the butter and either use a biscuit cutter or mix it until it looks like crumbs
  5. add in the vanilla extract and mix well with a handheld mixer
  6. add the egg and mix until it resembles dough. 
  7. place the dough into your pie plate and cover it with some saran wrap and press out the dough until it covers the pie plate. 
  8. prick some holes in the bottom so that the crust does not form large bubbles
  9. bake in the oven for about 10 - 15 minutes.

Here is another recipe for almond flour style pizza crust. 

This one is different, yet good. It also makes this the 4th or 5th pizza crust recipe that I have on this site, which makes for some nice alternatives when you are wanting to not only do gluten free, but keto friendly / low carb as well. 

The setup for this is quite easy and it backes quite nice also. My wife likes this one probably the best next to the cream cheese pizza crust and my daughter seems to like it also. They both say that this one is not nearly as greasy as the other ones

 

This is one of the crusts that you will want to par bake first, and you will for sure want to bake it onto a sheet of parchment paper on your pizza pan to prevent it from sticking. In this bake, I ran out of parchment paper and used tin-foil but the crust still stuck even though that I fully greased the tin-foil first. 

 

Ingredients:

  1. Preheat the oven to 350 to 375 degrees

  3. Using a handheld mixer mix up the ingredients until it starts to resemble dough.

Gluten Free, Keto Friendly, Low Carb, Pound Cake

The other day my daughter wanted a cake (she is celiac) and I wanted one too, but I wanted one that was low carb to fit on my keto diet and also needed to be gluten free as well. 

Here is what I wound up making that actually worked out quite well for the both of us. She was happy as she got to help out in the process with making the cake, and she also got to eat a good amount which she liked as well. 

 

 

Ingredients:

 

Directions:

  1. Preheat oven to 350 degrees
  2. Grease a loaf pan
  3. In a bowl mix the cream cheese, Splenda, sucralose or stevia and the butter together with a handheld mixer or a kitchen aid mixer until well combined and creamed. 
  4. Add the eggs and the vanilla extract and mix well until well combined. 
  5. Lastly add the Blanched Almond Flour and the baking powder and mix until there are no more lumps and again, well combined. 
  6. Pour into a greased loaf pan
  7. Bake in the oven for about 1 - 2 hours. Check it after 1 hour and using a toothpick or knife check the center to make sure that the toothpick or knife comes out clean. 
  8. Cool and if you want to, you can glaze it or add a cream cheese frosting to the top. 
  9. Enjoy.
