Gluten Free, Keto Friendly, Fried Fish

Here is a easy recipe for some oven fried fish which is super easy to make.

 

Ingredients:

  • 1/2 cups of pork rinds, crushed intothe size of bread crumbs (These need to be gluten free in order for this recipe to be gluten free)
  • 1/4 cup of mustard
  • 1 tbsp Italian Seasoning
  • 4 5 ounce pieces of fish.

 

Directions:

  1. Crush the pork rinds and mix in the Italian Seasoning
  2. Preheat oven to 400ºF. Coat a large baking sheet with parchment paper.
  3. Place pork rinds in a shallow dish. Coat both sides of each cod fillet with mustard and then turn fish in pork rinds to coat. Arrange fillets on parchment paper and place the baking sheet in the oven. Bake until fish is fork-tender and coating is golden brown, about 20 minutes.




Gluten Free, Keto Friendly Mashed Cauliflower (Fake Mashed Potatoes)

Here is a easy recipe for some gluten free, keto friendly mashed cauliflower (fake mashed potatoes)

 

Ingredients

  • 1 head of cauliflower with the steam and green stuff removed and cut in half.
  • 1 8 ounce package of cream cheese
  • any additional seasonings you like in mashed potatoes

 

Directions

  1. Trim the cauliflower and cut in half.
  2. In a large pot, boil some water and once the water is boiling add the cauliflower.
  3. Cook until the cauliflower is tender and you can easily stick a fork into.
  4. Drain the cauliflower into a colander
  5. Return the cauliflower to the large pot and turn the heat onto low.
  6. Add the cream cheese and using a immersion blender, blend to the consistency that you like.

If you want you can add in some butter, garlic or other seasonings.

Gluten Free, Keto Friendly Home Made Ice Cream

Who likes Ice Cream? Well, just about everyone does.

It is even better when you can make it at home in a soft-serve way, to which you know exactly what goes into it.

here is a easy way to make it at home. This uses a electric ice-cream maker.

 

Ingredients:

 

Directions:

  1. in a large pot, combine the heavy cream and half of the Splenda, sucralose or stevia.
  2. Heat over medium heat while stirring just before it starts to boil (Do NOT let this boil or else you will ruin the cream)
  3. Once you start to see bubbles forming on the cream, remove from the heat. I will usually use a rubber scraper to stir with to make sure the bottom is getting moved around.
  4. In a mixing bowl, add the egg yolks and the rest of the Splenda, sucralosestevia or Erythritol. Using a large spoon, take some of the hot cream out of the pan and add it into the egg yolks while immediately mixing the cream and the yolks with a wire wisk to temper the eggs. Add a few spoonfuls of the cream to the egg mixture and mix to get the yolks up to temperature.
  5. Add the eggs mixture to the cream and put the stove on low. Cook this for about 10-15 minutes until the mixture has thickened up. If you take a rubber scraper and get some of the cream mixture on it and you can use your finger to make a path and the path you made stays, it is thick enough.
  6. Pour the cream mixture into a large bowl , mix in the vanilla extract and the xantham gum and cover with plastic wrap (you will want the plastic wrap to be literally on top of the cream so that it does not form a skin)
  7. Put in the fridge overnight or put into the freezer until this has cooled off significantly (the colder the better, but not frozen at this point)
  8. When it is cold enough, setup your electric ice-cream maker and spoon the cream into the electric ice-cream maker and let it do it's job.
  9. Once done, I will usually put this into a new bowl and put into the freezer for about 30 minutes as it can be extremely soft.
  10. Eat.

One side note is that this has the tenancy to turn into a block of ice when left in the freezer overnight, so it is best to make up only what you need.

Donald J. Trump was sworn in today. Take just a minute and let that little nugget sink in. I'm not sure what to think about the entire thing. I like what I hear from his transition team about the significant cuts he intends to make to a variety of worthless and unconstitutional government money pits. But how much of it is real and how much is typical politician hyperbole?

Today I'll give you some of my thoughts on the inauguration, and we'll talk a little about the protests happening in D.C. and around the U.S.

I'm also going to tell you about the massive violation of your 4th amendment protection perpetrated by the Obama administration just before he left office. Let's just say any protection you thought you might have to unreasonable search and seizure just went right out the window.

It's a mixture of fear and cautious optimism today. I find myself conflicted.

Gluten Free, Keto Friendly Mexican Casserole

Here is a super easy recipe to make and it actually works great if you are in a pinch for time.

Gluten Free Mexican Casserole, Keto Friedly Mexican Casserole

 

Ingredients:

  • 4-6 Tbsp of taco seasoning
  • 2 pounds ground beef
  • 1/2 cup onion, chopped, 2 3/4 ounces
  • 1 cup salsa (Tostitos and Pace have gluten free salsas)
  • 1 cup cottage cheese
  • 8 ounces cream cheese
  • 16 ounces mexican style cheese, shredded

 

Directions:

  1. Preheat the oven to 375 degrees
  2. In a large pot, brown the ground beef and onion
  3. Stir in the taco seasoning, salsa and salt to taste
  4. Stir the cottage cheese, cream cheese into the meat mixture along with half of the mexican style cheese, and keep on the stove until it becomes bubbly.
  5. Pour into a 9x13 baking dish. Top with the remaining cheese and bake at 350º for 15 to 20 minutes or until the cheese is melted.

Gluten Free Spaghetti / Pizza Sauce

Here is a super easy recipe for some very good gluten free pizza sauce base, which also works great as Pizza sauce!

 

Ingredients:

  • 2 Tbsp butter
  • 1/4 cup grated onion
  • 1/4 tsp oregano
  • 2 - 3 garlic cloves, minced
  • 2 lbs of fresh tomatoes
  • 1/2 tsp sugar
  • 2 tsp basil
  • 1/2 tsp salt

 

Instructions:

  1. In a large pot, start to boil some water.
  2. Get a large bowl and fill it with ice water
  3. Remove the stems from the tomatoes and any spot on them as well, and wash them.
  4. Once the water is boiling add the tomatoes to the boiling water for about a minute, or until the skins start to crack.
  5. Remove the tomatoes and place into the ice water.
  6. After a minute or so in the water, remove the tomatoes and peel off the skin.
  7. Cut them in half and you can either scoop out or squeeze out the seeds.
  8. Cut into small to medium size chunks.
  9. In the large pot, add the butter and over medium heat, melt the butter 
  10. Add the onion, oregano, and 1/2 teaspoon of salt.
  11. Cook, making sure to stir occasionally, until the onion is golden brown, about 5 minutes. Add the garlic and cook until fragrant, about 30 seconds.
  12. Increase the heat on the pot and add the tomatoes and sugar
  13. After the tomatoes get to a low boil, turn the heat down and simmer, while stirring here and there until the sauce reduces by 1/3. The tomato chunks will begin to break down into a tomato sauce. If the sauce is too thick, you can use a hand blender to break down the sauce more.
  14. At this point the suace can be used as a spaghetti base or for pizza sauce!


You can also double this recipe if need be. By making this from tomatoes directly it has a few key benefits.

  1. You know it is gluten free
  2. There is no BPA chemicals like there is with tin cans.
  3. You know what is in it.
